There are really only a few things you can do with a small model count army when you're up against large blocks and heavy steadfast.
With HElves, you're probably best off either using powerful direct damage/magic missiles to whittle down huge blocks before engaging them, or else ignoring them in favor of clearing chaff/war machines and gaining points that way.
You could also use the age old method of flank charges to negate steadfast, or draw your opponent into a wood or some similar terrain feature in order to ignore their rank bonus/steadfast. Putting yourself in a building also works, where you'll not only get 10 models' full compliment of attacks, but with your elite troops you'll likely win combat (since it's based on wounds caused alone).
Or else use the WoC tactic of combo charges - even if you don't have a ton of ranks, or huge blocks, a couple charges from elite ASF elf troops are going to dole out some pain to most units. Even if the enemy survives the first round and holds on to steadfast, you should be able to do enough damage that in future rounds, he will quickly lose his bonus.
I for one, even as an elite combat army, am still terrified of getting into combat with high elf and dark elf special choices without softening them first with magic.

Changes I'm making from the list I used a couple weeks ago --
Dropping the prince, switching to High magic on the Archmage Swapping the Silver Helms for a block of Sea Guard, Switching the Phoenix Guard for White Lions (with a mysterious magical banner) Adding Dragon Princes (9)
We'll see how this list goes on Sunday.
