So the points difference is only 5. And I COULD solve the problem. By buying another knight/ebay the arm... Not enough pieces to magnetize both weapons so, which do I go for?
As stated in the media post I'm likely to chop up the arm and gun a bit too which would make swapping even more difficult.
So: extra stunner (big whoop?) and a two shot battle cannon? Or A 36 in large blast melta at str 9?
Out side of apoc the range shouldn't make a huge deal, he can walk and shoot reaching almost anything on the board. So as a stand alone unit does a IK want to be more anti infantry or anti vehicle?
I keep thinking: "damn a melta blast is awesome" but the two shots of battle cannon comes in at an almost 250 point value (2 basilisks).
That being said, the IG (my main force) is never lacking for either long range anti infantry or anti tank.
So what role should the IK fill?

As you said, your force can handle most things anyways, so just go with what feels like the coolest thing. I'd go melta, but that's because I love melta (and blasters...and dark lances...yum).
However, I do feel like the biggest threat to IKs is big beefy CC characters like hive tyrants, tooled up chaos lords, demon princes, etc. Being slow, and not getting to use the 4++ in CC, they tend to die to excess hull points from smash, haywire grenages, melta bombs, etc. So whatever is best at killing those types of models, High S and Low AP, would be best (read: melta) in my opinion.

It doesn't really matter. Like you stated you have the guns to deal with anything anyway. What you should do is build a gigantic distraction. An Imperial Knight is something the opponent ignores at his/her peril. So while he kills the knight the rest of the army is already exploding.
